Sure-Fire, Go To Dinners: Multiples and More Question of the Week

It’s completely no secret in my life that I really don’t cook. Yup — I said it. I am a Diva, and my husband does most of the cooking. The difference between Brett and myself is planning. I’m a list maker, trying to plan ahead; while Brett tends to wing it a bit. Sometimes that works, but when I’ve got the Kennedy Kaboodle under my feet, while I’m trying to cook, chaos ensues. It’s a lot more efficient for me to at least try to plan ahead a bit.

One recipe that works well in my house is Tortilla Soup. I’ve tried a couple of different versions, both of which are delicious and super easy. Today’s version is this recipe, courtesy of my friend Wanda.

Tortilla Soup
3 cans of pinto beans (do not drain)
3 cans petite diced tomatoes (do not drain)
3 cans creamed corn
1 can of RoTel
1 can standard corn, drained
1 can of black beans, rinsed and drained
2 packages of Ranch dressing mix
1 package of Mild Taco Seasoning
(I also added a can of green chiles, because I love them!)
Mix all ingredients in crock pot until hot. Serve with shredded cheese, sour cream and tortilla chips. 
Easy as can be! I went to the store with the boys, got all the ingredients, threw it all in the crockpot, and dinner was ready in about 90 minutes. Bonus: there will be enough for leftovers for Brett for lunches this week, as well as enough for me to take to work. This turned out milder than expected — next time, I may opt for the Medium Taco Seasoning, or add more green chiles.  For the most part, all the children will gobble this meal up. We definitely have some picky eaters in my house — the boys are generally just too ‘busy’ to sit down and eat, while Rachel likes to demand what type of food she is served. Luckily, Abigail is pretty responsive to the majority of what we cook, although she announced on Facebook recently that she was becoming a vegetarian. SIGH. 
Various types of pasta (Bowtie, rotini) are a staple in my house, as well as rice. When pressed for time, we throw that on the stove, then top with a little marinara sauce, or olive oil and cheese, and the kids are set. Everyone loves Mom’s homemade pizzas, and those are quick and easy. Pretty soon, as the boys get older and start eating more, I’m going to have to invest in another pizza stone so that I can have 2 pizzas ready to go at the same time.
