Or your Bunco group, Moms club, church potluck, or whatever else you have to take a dish for! I made this, compliments of my friend Maggie, and jazzed it up a bit. Of course, when I made it, my stomach was upset, so I sent it with my husband to take to his parents for brunch. It was a major hit.
Tortilla Soup
6 cans Campbells Chicken and Wild Rice Soup
2 cans Rotel Tomatoes
1 can green chiles
1 package of frozen corn
1/2 lb pepper jack cheese
1 package of taco seasoning
Fritos, or tortilla chips (your preference)
shredded cheese
sour cream
Combine soup, tomatoes, chiles, corn and taco seasoning in Crock Pot, turn on low. I cut the cheese into small cubes, and threw that as well. Let soup simmer all day, and you’re ready for dinner! Garnish each bowl with Fritos, shredded cheese, and a dollop of sour cream. This is a bit spicy — you could leave out the chiles and pepper jack cheese, but what fun would that be??
